Can I change the scoring after the event has started?

Change scoring settings mid-event, then recalculate every match.

Yes. Change it on Setup > Scoring and click Save. Matches that are already scored keep their old points until you recalculate them.

Make your changes on the Scoring tab and click Save in the top bar.
Go to Game Day > Pairings and click Rescore. On a phone it is in the ... menu next to the round picker.
Click Recalculate Scores.

Every match in every round is recalculated with your current setup. Pairings already made do not change.
